Ingredients:

  • 1/2 cup (1 stick) unsalted butter at room temperature

  • 1/2 cup granulated sugar

  • 1 large egg at room temperature
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips
  • 1/4 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon peppermint extract

For the Topping: 

1/2 cup chopped candy canes

Directions:

Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides. In a bowl, mix your butter and sugar together until light and fluffy. Beat in your egg and vanilla. Mix the flour, salt, baking soda, and baking powder in a different bowl. After, gradually add the flour mixture to the butter mixture until just blended. Stir in the semisweet and white chocolate chips with the peppermint extract. Spread your batter evenly into a prepared pan. Sprinkle it with candy canes. About 25 minutes into baking, insert and remove a toothpick from the center. It should come out with some moist crumbs still attached. Before cutting it into squares, let it cool completely on a wire rack or in a pan. Blondies can be kept in the freezer for up to 2 months or up to 3 days at room temperature when kept in an airtight container. Enjoy!
