Butter Prices Down This Week After Holiday

This week’s Legacy Market News Report has important information for bakers, as it discusses the supply, demand and pricing of the dairy, egg, and flour markets. Here are some takeaways:

BUTTER: Prices down .0275 after last week, at $1.42. Compared to a year ago, butter is down almost fifty cents.

EGGS: Large Eggs are down about 2% from last week. Consumer demand is still strong after the holiday. Inventory of shell eggs overall has decreased 8%. Liquid whole eggs offerings are moderate to heavy on limited demand and slow trading.

FLOUR: There will be a drier pattern over the next two weeks as there is currently snow cover on the wheat belt. Managed money continues to trade spring grains versus winter grains, and is expected to continue into February.
